Relaxed Farming Food: Asparagus

Asparagus is a seasonal vegetable which is usually available from April through to July. The fleshy green spears of asparagus are both succulent and tender and are considered a delicacy - they tend to be rather expensive in restaurants! We tend to pop them in the steamer for three or four minutes and then enjoy them with goats' cheese and salad. As the season progresses the spears get a little tough to steam so we then stir fry them in a little olive oil.
The asparagus 'spears' erupt through the soil like volcanoes, the first ones of the year usually appear mid-April - they continue to 'pop up' until late July/early August.

These spears have gone green through the action of sunlight on the chlorophyll in the asparagus - some people cut the spears whilst they are still under the soil, these spears are white and are considered even more of a delicacy!!
